Mashed Sweet Potatoes


A touch of honey and orange juice gives this crowd-pleaser unexpected zip.

SERVES: 8
PREP TIME: 15 Minutes
COOK TIME: 25 Minutes

Ingredients

6 sweet potatoes (about 4 pounds), peeled and cut into eighths
Kosher salt and pepper
3 tablespoons honey
1/2 cup orange juice
1/2 cup sour cream
1/4 teaspoon ground nutmeg

Directions

	Step 1: Place the potatoes in a large pot and cover with cold water.

	Step 2: Bring to a boil and add 1 tablespoon salt. Reduce heat and simmer until just tender, 15 to 20 minutes. Drain the potatoes and return to the pot.

	Step 3: Add the honey, orange juice, sour cream, nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

	Step 4: Mash the potatoes with a handheld masher and transfer to a serving dish.
